I continue to keep part of my chili peppers while in the freezer simply because some dishes (eg salads) need to have new peppers. I do think it is a good idea to not dry them all.I retail outlet my dehydrated peppers in apparent jars with gaskets on the rack in my kitchen. They have been fine since last slide.
